Color: Ruby red with violet reflections, intense, persistent.

Aroma: Aromas of red fruit, with a prevalence of cherry. 

Taste: Complexity that from the nose is confirmed in the mouth, with further spices and a savory finish reminiscent of mineral and almond.

Typical combinations: First courses of soups, risottos and pasta or main courses of meat and fresh and aged cheeses. Maintains its characteristics for more than 9-12 years; like all wines it must be stored in cool (below 18 degrees) and not very bright places not subject to high temperature changes.

Cultivation area: Valpolicella Classica, Negrar - Verona, Veneto.

Soil type: Clayey - gravelly.

Harvest: End of September - October by hand harvesting in boxes per plateau.

Vinification and ageing: Strictly traditional, classic blend, destemming, fermentation in steel tanks for about 10 days, frequent pumping over, daily checks. Maturation in wood for 12 months in 250 liter Slavonian oak barrels. The classic method of valpolicella ripasso is used.
