Tenuta Sant'Antonio Scaia Bianca is a still white wine produced at the Tenuta Sant'Antonio. The very high quality of this wine has allowed it to obtain the brand IGT (Typical Geographical Indication).
The winery is managed by Armando, Massimo, Tiziano and Paolo Castagnedi, having inherited not only the structure, but also the passion for viticulture from his father. Over the years the Castagnedi brothers have expanded the hectares of vines available and decide to get involved to start producing their wine, Scaia Bianca, produced from mixed quality vines, that 50% of Garganega, 30% of Trebbiano di Soave and 20% Chardonnay. The processing of the screws, located in Colognola in Veneto, it takes place according to the mixed farming system, Guyot and Pergola.

After the harvest, strictly manual, the bunches are selected with great care and transported to the cellar, where the soft pressing by means of a cold pneumatic press. The temperature control of the machinery ensures that the clusters keep all their properties unaltered. Then the maceration, also cold, for a short period that oscillates between 10 and the 12 hours.
The next step is the alcoholic fermentation, in steel containers, carried out in low temperatures and with selected yeasts. The fermentation and the refinement phase last a few months, until April. From this precise and competent processing derives a great wine, representative of the territory of origin and loved by critics. Straw yellow with greenish reflections. White flowers of acacia, jasmine, bouquet of citrus fruits such as pineapple, grapefruit and orange, apple, pear and mango and a light note of bananas. Fresh and pleasant given by the well sustained acidity. Well-balanced softness and flavor make it inviting and intriguing.
