||By hand, early in the morning or in the late afternoon, in small crates placed before arriving in the cellar, in refrigerated cells. Mid October.
||After destemming, the grapes are conveyed into 100 Hl steel fermenters, equipped with a programmable pumping over system (to obtain maximum results of color extraction and softness of the wine), and temperature control. There maceration on the skins it lasts for about 20 days.
||After fermentation, the wine is placed in new barriques from various French artisan tonnellerie for about 18 months.
