Cabernet sauvignon, Merlot and Cabernet franc, selected from the best vineyards of the company, skilfully vinified and aged in small oak barrels guarantee a granitic wine, powerful and harmonious at the same time, capable of aging for decades. Rather concentrated ruby ​​red. Nose on fruity and spicy registers: black cherries and raspberries in jam, vanilla and cloves. Drink in line with the nose, opulent, consistent and with tannins in the settling phase.

winemaking Maurizio Zanella is obtained by separately vinifying the Cabernet Sauvignon, Merlot and Cabernet Franc grapes from the best Ca 'del Bosco vineyards. The grapes, harvested by hand in small boxes, are promptly classified and cooled. Each bunch is selected by expert eyes and hands, before being transported to the vat of maceration. With de-stemming, the grapes fall into the vat, from above, by gravity. This avoids the use of traditional pumping systems, which would bring unwanted herbaceous notes. In the 2009 harvest, the alcoholic fermentation and maceration were conducted for 22 days, carefully managing the temperature and punching down. The pumping over was carried out daily, using a pair of lifting tanks into which the wine, tapped from the bottom of the vat, is transferred by gravity. The wine, brought up from the flying tanks, is poured into the vat, at a high flow rate, to submerge the "hat". Nothing could be more natural and effective to delicately extract color and tannins.
Refinement After racking, the wines, still warm, are decanted into small oak barrels, 60% new, obtained from selected woods, aged for at least 3 years. Only after the malolactic fermentationin full winter, the different batches are poured and assembled. Thus was born the Maurizio Zanella, which continues his aging in wood for about 17 months. Afterwards, the different batches are assembled and the wine is bottled by gravity, in a natural way. Thanks to innovative filling systems, the wine does not undergo oxidative shocks, flapping and further additions of sulphites. Its integrity and healthiness are guaranteed.
