||Between 3 and 15 September the grapes were harvested by hand in 15 kg crates in four steps according to the different parts of the vineyard. The bunches carefully evaluated in the field were carefully selected on a double sorting table, before and after destemming.

In practice, every single grape is carefully checked as it slowly advances on the sorting table and is discarded if it is not perfect to continue towards the fermentation tanks. At this point the grapes continue in the cuverie, where the most advanced technology of steel joins its forces with the tradition of wood. Fermentation takes place in state-of-the-art stainless steel tanks that allow perfect temperature control. During this phase, the progress of fermentation in each tank, which represents a specific plot of the vineyard, is methodically followed thanks to daily tastings.
