All projects end of winter, following the first alcoholic fermentation which takes place in stainless steel tanks, the wine is subjected to a second fermentation in the bottles (after a small addition of sugar and yeast) in special cellars at a controlled temperature.
The wine is aged with its own sediments for about 18 months. The bottles are then placed in the traditional "pupitres" in thermo-conditioned cellars in San Casciano where they remain for about 3 weeks. After the "dégorgement" the bottles rest for another 3 months before being sent for consumption.
