||The microclimate of Castiglioni, hot and dry, and the vineyards, completely renovated starting from the 90s and planted at high density, allow to produce wines with marked hints of red berry fruit, typical of this area.
||Spurred cordon and guyot.
||Sangiovese: October, Merlot: September.
||Fermentation containers: steel. Times of maceration: 10 days. Malolactic fermentation: Immediately after the alcoholic one.
||6 months with micro-oxygenation and one month in the bottle.
||Savory dishes such as pappardelle with meat sauce, but also roast chicken, strips of beef with vegetables and some semi-aged cheese.
||Thanks to the excellent microclimate of the area, Chianti Castiglioni reflects the characteristics of terroir which represents and is a wine soft, pleasantly fruity and with a strong and well defined character.
