||Fermentation: in concrete tanks. Malolactic fermentation: carried out in 500-liter tonneaux.
||24 months in 500l medium-toasted French oak tonneaux, partly new and partly second passage. A aging at least 6 months in the bottle, before being put on the market.
||Elegance and body harmonic of the wine allow combinations with very structured dishes such as red meats, feathered and furred game, possibly accompanied by mushrooms and truffles. Excellent with cheeses such as aged tome, Parmigiano Reggiano and Tuscan pecorino.
