Tasting notes: In the glass it is revealed with a deep and concentrated garnet color. The nose is enveloped by aromas of violet, enriched by hints of cherry and references to licorice; at the end of the olfactory analysis there are tertiary touches. In the mouth it has an elegant, harmonious entrance, in which the sip is firm and decisive thanks to a strong tannin, which over the years will be more "melted" in the general structure. It closes with a persistent finish.
Match with: Try it with the baked shank of beef.
Considerations: Coppo is a very important winery within the Piedmontese wine scene. Thanks to its coat of arms, it is one of the few production companies authorized to vinify Nebbiolo from Barolo DOCG outside the production area indicated by the specification. We are facing a still “young” bottle, pleasant to drink now but which promises to be rich in new olfactory and gustatory nuances in the future. The grapes ferment in steel, macerating in contact with the skins through delicate and short pumping over. The final refinement takes place first for 30 months in large French oak barrels, and then for 6-12 months in glass, once bottling is complete. A great Piedmontese red, in the interpretation of a historic winery in the area.
