Bertani owns about two hundred hectares that cover a vast territory and a wide range of vines that allow it to cover six denominations and different geographical indications, ranging from Lake Garda to Soave, passing through Bardolino and obviously Valpolicella. Here in Arbizzano di Negrar the splendid Tenuta Novare represents the fulcrum of the historical activity, with its alternation of soils, from the clays of the valley floor to the calcareous soils rich in iron and manganese to reach the soils rich in basalt, and its mild climate creates the ideal conditions to produce the famous Amarone for seventy years. The Estate also gives its name to the method introduced in 2013 to improve the drying on the plant, taking up an ancient local tradition. The Novare method consists in cutting the shoot in order to interrupt the flow between the plant and the bunch, which thus has the possibility of withering in the shade of the foliage created by the trapezoid cultivation.
